Enjoyed the recipes and will try a few. One thing I have done for 35 years to
stretchhhhhhh butter and to lesson the fat Is to soften the butter in either food blender or a bowl and add about 1/3 to 1/2 ccup of oil of choice. For example take two stickes of butter and add l/2 cup of good oil and mix up. Put in a
container in fridge. The butter is always SOFT and is l/2 of the fat. My adult children all do it now too. I refuse to use margarine and one still gets the butter taste! Add herbs etc and enjoy…….a proven recipe and use more of less oil depending on the time of year, humidity or cold will use different amounts – just play with it to fit your family.

I have to admit, I’ve been really nervous about ordering a basket and then not being able to get a meal plan together quickly enough to use up the produce. I have been following My Journey to Lean for a long time now but was always nervous that the week I ordered Melissa wouldn’t post one of her helpful meal plans but now it looks like it will be a regular feature here! Wonderful! I’m looking forward to ordering my first basket this week! Just trying to figure out whether I am north or south of 85. 🙂 I live in Greer.
